Chef Matt Meyer’s latest endeavor will surprise, excite and invigorate your love for eclectic cuisine…


The worst is over and Las Vegas is back. Tourists are flooding in and locals are venturing out to rejoin civilization. In the past few weeks, long-established restaurants have been operating at allowable capacity (and quite frequently, turning customers away). There’s never been a better time to discover new offerings, and one of the most exciting is SERVED GLOBAL DINING.

You might recall my visit to SERVED‘s original location, an intimate affair overseen by prolific Chef Matthew Meyer. Nestled in a small shopping center in the heart of Henderson, SERVED‘s kitchen doubled as a catering service, allowing the handsome chef to stretch his culinary wings while building an extremely loyal dine-in following.

Last month, Chef Meyer was able to expand to a nearby location at 1450 W. Horizon Parkway. The spacious (and carefully-spaced) spot has allowed SERVED to go “epic” with full bar service and a central Chef’s Table designed to feature guest presentations. Chef Meyer is known for his bold blending of colors, textures, and temperatures in unexpected ways. The result is a bevy of dishes that’ll capture your imagination as much as your palate. Even more conventional fare like Benedicts, burgers and salads receive a distinctive makeover that will have you craving more.

You must be willing to make mistakes and never settle for the status quo. Once you release all preconceived notions, only then can you start to truly go beyond what the imagination can realize. Imagine a Caesar Salad with Parmigiano Reggiano ($9.50) in which the romaine has been grilled to a smoky flavor.  Or Short Rib Grilled Cheese with fermented mushrooms ($12.50). Perhaps a hand-made Miso Carbonara Pasta with Iberico pork belly ($27)? They’re all there, made to order and Instagram-ready to cause envy in your friends.

On my recent dinner visit, Chef Meyer suggested Beef Wellingon ($63), a six ounce British Baldy filet nestled inside a puffy crust. It’s served atop potato mash with a port wine reduction and accompanied by seared asparagus. “I’m pretty proud of it” Meyer told me.

The taste was exquisite, and the portion was large enough for two, especially when adding a generous side like Sautéed Mushrooms, Truffle Herb Steak Fries or Creamed Spinach (all $9). Other entrées on the latest dinner menu included Seafood Pasta in white wine lobster reduction ($35), Short Rib Stroganoff with wild mushrooms ($33), and a Vegan Curry with celery root and black rice ($20).

Meat lovers can dive into a 16 0z NY Strip with smashed potatoes and blistered tomato herb salad ($44), a very popular Pasture-raised Mushroom Chicken Breast with glazed carrots ($25), or Peruvian-style Lomo Saltado, a marinated sirloin filet with rice, plantains, steak fries and two sunny-side eggs ($25).

If seafood is your craving, try Apple Sage Scallops (($35) or Wild Salmon with scratch-made Panang Curry (($32). There’s Lobster Borscht ($22), Matt’s California Roll ($13), Oysters (3 varieties/6 total, Market Price) and more selections from the Raw Bar.

Breakfast and brunch have always been big draws at SERVED, and their new location has expanded hours to satisfy diners at every meal. Traditional Eggs Benedict has made way for some wild variations like Barbacoa Beef or Turkey ($16), Softshell Crab ($21), Manuka Honey Ham ($16) and King Crab ($28). Each comes with its own unique accompaniments and sauces.

If Bennies aren’t on your short list, there are plenty of other egg dishes: Hawaiian-inspired Green Eggs and SPAM with garlic fried rice ($13), Corned-beef Hash Tacos topped with quail egg ($12), Crispy Chicken and Waffles with orange compound butter and real maple syrup ($18), and a Filipino Breakfast plate with your choice of three proteins, plain or garlic fried rice and three eggs ($14).

Lunch choices are just as unique, with fresh, distinctive takes on burgers. But you won’t want to pass up a Rueben with house-made corned beef, Swiss and sauerkraut ($15), Prime Rib Dip ($15) and a Triple-Decker Turkey Club ($14). Dive into a shrimp or soft-shell crab Tempura Po-boy with yum-yum sauce ($16), savor the Pastrami-Style Pork Belly sandwich with house coleslaw ($16), or choose from Banh-Mi‘s featuring Portobello Mushrooms ($16) or Roasted Iberico Pork Belly ($20).

Bring Your Summer Sexiness to THE PLAYGROUND


New adults-only day club advances the Westgate evolution and invites you to be a kid again…

Earlier this year I introduced you to Eddie Perales, the famed master mixologist who bubbles with as much excitement as his creations. Known to the world as a Guinness record-holder and creator of outlandish displays of liquid madness, Perales promised me that he would have more in store for the summer season at Westgate. After my most recent visit, I can say that he was true to his word…and then some.

While other Vegas resort pools are just getting started, Westgate has been in the game since March. The sleek, sunny deck was opened two months ago with a heated pool, bright luxurious loungers, dazzling cabanas, attractive model-servers and a fresh, inviting color scheme.

Over on the south end of the sprawling deck, The Playground day club has been launched. This area’s designed for revelers twenty-one and over. Says Eddie “Our pool deck is a hidden gem. Families can share in the fun and excitement every day, but for the grown-ups, it’s The Playground“.

The Playground invites partiers to toss their inhibitions out the window and act like a kid again. The 21-and-over space has daily DJ’s starting at 1pm. There are games like cornhole, chess and jenga and plenty of space to stretch out in VIP Cabanas. Drink specials, discounts for WOW Reward Card members and themed days should have fun-lovers coming back all summer.

“Our ultimate goal here was to create something for everybody. The pool was like a blank canvas to me. It’s an great space and part of an iconic resort. I mean…just look at that view! We’re doing things in a different way here at Westgate” he added “and how we’re doing it is the key”.

Eddie’s unique background in the world of beverage service gives him a distinctive edge that few in the city can boast about. “I’ve worked on the supplier side as well as being a mixologist, so I understand all aspects of this business. I’ve been able to identify liquor partners that other resorts blindly miss. We highlight them to make unique drinks that you won’t be able to find elsewhere”.

For instance, Eddie is big on Santoyo Grand Leyenda Organic Tequila. The premium tequila is derived from agave grown on Mexican lands that must be virgin for at least four years. Tequila Tuesdays feature the product and WOW Reward Card members get happy hour prices all day. “You may remember that I was once a Tequila Ambassador. I know my tequilas, and this one is terrific”.

Another hot-ticket new partnership is with the legendary Dole Whip. That frozen pineapple soft-serve from Oahu’s Dole Plantation was once an exclusive to guests of Disneyland and Walt Disney World. Now, along with The Golden Tiki and Cowabunga Bay Water Park, Westgate is one of the few places in the continental U.S. to offer the refreshing treat.

As you’ve probably guessed, Perales created a special cocktail using Dole Whip and Mount Gay Black Barrel Rum. Topped with a slice of fresh pineapple and an orchid, the Dole Whip Cocktail ($13) comes with both a spoon and a sipping straw.

The Playground‘s Signature Cocktail Menu has thirteen varieties, each running thirteen dollars. Eddie points out that any of them can be ordered as a pitcher for $27, which equals four servings for roughly the price of two. “Our prices are way cheaper than what you’ll find on the Strip”.

Perales has a signature style of combining fresh fruits, bright colors and unusual combinations for the brightest, funnest cocktails imaginable. One look above will show you what I mean…a bright array of tempting and luscious indulgences that will have you feeling happier with each sun-drenched sip.

Perales and I met early one morning at The Playground before the crowd started kicking up. After sampling all thirteen concoctions with names like Strawberry Blonde (Ketel One, lemonade, Mike’s Hard Strawberry Lemonade), Bigger in Texas (Tito’s Handmade Vodka, lime, Baritt’s Ginger Beer), Passion Fruit Smash and Bananarama, I had to choose one to relax and chat over.

               Eddie whipped me up a special size of Fireball Mojito…in a bucket!

Eddie watched closely as I stood up…and reached for the Fireball Mojito (Fireball Cinnamon Whiskey, lime, mint and club soda). “Really?” he exclaimed. “It’s my favorite, too. People said that you can’t do something like that. So of course I had to try it”. And yes, it was a fabulous contrast of flavors that had me back for an industrial-sized serving the next day.

Along with The Playground‘s new specialties, there are also familiar frozen drinks, beer, wine, and what Eddie calls “The least expensive bottle service in Las Vegas. It starts off at $65 for Hug L’originale Sparkling Wine (a European import that’s being called the hottest brand for summer 2018). Nobody else offers bottle service at that kind of price”.

Next to The Playground, Cabana Pool Bar and Grill offers a wide variety of snacks and meals. Choose from pizzas, beef and turkey burgers, sandwiches, wraps and healthier fare like California Rolls and Chef Bruno Morabito‘s famous Mojito Fruit Bowl from Sid’s Cafe. Of course, all of these items and more can be brought directly to your chair or cabana by the poolside servers. Check out the online menu here.

Also ready for roll-out are cabana-side cocktail carts. “I was inspired by the table-side guacamole carts at Mexican restaurants. Why not do that for cocktails? We can fill them with colorful fresh fruits and make drinks right at your own space”.

Sounds like a great idea to me…why bother to leave your lounger when you can be pampered like a celebrity? And the sight will surely attract new friends to your space. Eddie’s presentation certainly was a hit with these Vegas newbies who came over to hang out with me.

And speaking of pampering, adjacent Serenity Spa has joined The Playground to formulate a collection of Summer Spa Cocktail Body Treatments. Based on your favorite Playground Signature Cocktail, these pedicures and body scrubs include a serving of the actual cocktail, too.

Binion’s Cafe Gets a Menu Upgrade


Fremont’s struggling casino gives you new reasons to visit….

A few weeks back I wrote about the trend of casinos pushing their dining and retail operations to the very front of their properties. In many cases, they even go out onto the sidewalks themselves. Binion’s historic downtown property is one of those I mentioned in the piece.

Binion’s is the best example of how Downtown casinos shifted their focus from interior to the sidewalks. Exploring the property, you’ll find numerous examples of a time when guests stayed and played indoors. On the second floor, a buffet and the Gee Joon Asian restaurant are collecting dust. In the basement, a once-popular 24-hour Coffee Shop is abandoned as well.

As visitor habits changed, the once-popular Binion’s Gambling Hall shuttered their lodging operations along with my go-to favorite, the downstairs Coffee Shop. The casino-floor cafe, which was basically a lunch counter surrounded by slot machines, was best known for its fresh-ground Binion’s Burger and not much else.

Eventually the space was enclosed and converted into a full-service restaurant with improved seating and an expanded menu. That successful expansion was the springboard for another re-invention when Benny’s Bullpen (a cigar lounge/sports bar) became Benny’s Smokin’ BBQ and Brews.

While Binion’s has seen casino traffic dwindle with the closure of a short-lived bingo room and their historic Poker Room (original home to World Series of Poker), Binion’s Cafe continues to draw in long-time visitors and new guests.

This week, Binion’s Cafe rolled out an updated version of their menu with lots of new items to dive into. Added dishes include Classic Pot Roast ($14.99), Linguine with all-beef Meatballs ($12.99) and Poached Shrimp Alfredo over Linguine ($14.99). Entrees come with a choice of salad or soup.

If you’re looking for something smaller, try a plate of Mo’s Poutine ($5.99), crispy fries topped with molten cheese curds and gravy. Health nuts like myself will appreciate house-made Fire-Roasted Red Pepper Hummus ($5.99) served with warm pita bread, cucumber slices and celery sticks.

                                                         No more chili….

I was shocked to see one of my favorite Vegas indulgences, Binion’s famous truckstop-style chili, missing from the new menu. That greasy-spoon bowl of tomatoes and beans had gotten this fellow through many a night of partying in the past. I later learned that it’s still available at nearby Binion’s Deli, but only from 12pm-8pm.

Of course, mainstay Binion’s Burger remains ($5.99) on the menu and comes with their delicious potato salad (fries and cheese are extra). Also, the Club Binion’s Player’s Card will get you special discounts on select items.

It’s worth mentioning that meats and poultry at the Binion’s Cafe are cut daily at their own in-house butcher shop. Symbols identify these dishes, along with those designated as “heart healthy” and selections available only during limited hours.
